Abstract

Handwritten letter from R. [Richard?] Taylor, to Captain Gustavus D. S. Trask, referring to a previous conversation with Trask regarding keeping food in the dining rooms warm. Taylor suggests chafing dishes rather than steam tables, due to time constraints. Taylor also states, in response to Trask's suggestion of hiring more waiters, that he does not believe twenty more inmates could be found to do the job, as he already struggles to keep one or two extra waiters available. He recommends keeping breakfast hash warm in the kitchen and served to order, or in chafing dishes, and suggests possibly hiring outside waiters.
